How did you come up with the idea for Hip Pop?
Emma: When Kenny first told me he had tummy issues, I gave him some of my homemade Kombucha which I learned to make when I lived in the US, where Kombucha is super popular. Within a few weeks, Kenny's IBS was much better so he convinced me to build a tiny microbrewery in my Garage in order to start sharing with others. We sold our booch on local farmers markets and the feedback blew us away so we decided to take the leap and create a proper grown-up brewery on a beautiful farm in Cheshire.
What makes your product special?
We're a small family business without investors snapping at us to cut costs so we can afford to brew in a traditional way with nutritious organic ingredients. We're not forced to add processed sweeteners like Stevia/Erythritol or use marketing shizzle to cover any misgivings. This allows us to experiment and play until we create honest Kombucha that speaks for itself - full of flavour, body and goodness.
What has been the best part of your experience?
Winning a Great Taste Award in our first year was fab but customer feedback - beats everything else. In fact, we read aloud every single product review in our daily meetings and because we're such a small team we know that we have all played an important role in making that customer happy. We can also act fast on any constructive feedback, which makes coming to work every day a total joy.
Is all Kombucha the same?
Unfortunately not. It's a bit like beer, wine or coffee, you get stuff made in mass and then you get a handcrafted booch. Booch and brew is traditionally handcrafted on a beautiful farm in Cheshire.
Why organic?
Organic farmers must meet strict EU standards and grow sustainably without the use of pesticides or other toxins. Since we became organic, our nutritious booch has a much deeper flavor and character.
Why is sugar essential for true Kombucha?
Our organic cane sugar feeds friendly crops (the good stuff). Any residual sugar is broken down during fermentation, so it's easier for the body to process it. Per 100ml, our Kombucha ranges from 2.7g to 3.2g. To put things into perspective, it's very similar to natural carrot juice. Natural orange juice is around 8g and bottled smoothies can reach 18g. That's why we never use ultra-processed sweeteners like stevia or erythritol like sugar-free brands.
Does it contain alcohol and caffeine?
Yes, like all fermented foods and beverages, our kombucha contains trace amounts of alcohol. But it's so small that it's classified as non-alcoholic (below 0.5%). Caffeine is metabolized during fermentation, so it contains 1/3 the caffeine of an equivalent cup of tea.
Is it gluten free and dairy free?
Yes, our Kombucha is 100% gluten free and dairy free. It's made from 4 premium ingredients: organic loose leaf green and black tea, organic cane sugar, our own internal kombucha culture and subtly flavored with organic fruits and herbs.
