Why plant-based?
HOW IT STARTED...
From the first day we opened our doors (like a VERY small cafe) our values have remained the same:

Stay agile and evolve as needed
As you may know, we didn't start by serving plant-based food. In fact, we were well known for our "epic" shredded pork nachos. But a few things happened that opened our eyes to the truths of the meat and dairy industries that, once we learned them, we had a choice to make... stop serving animal products or change our values.
We didn't like the idea of scratching out all the values and starting over, so we made the change. It wasn't quick or easy or without a lot of 'bumps' along the way, however, our moral compass wouldn't allow for anything else, so we persevered.
It all started with health concerns, but soon evolved to include a sense of responsibility for dealing with surprising environmental issues and an empathy for how our food can impact other beings; humans and animals.
Today, we cannot imagine wanting to eat any other way. We can't imagine that plant-based foods are boring or below average, or any of the other naive labels we've given them. We ate incredibly delicious food. Much more delicious than ever.
What's more, we know that every herbal meal that makes our taste buds sing and our belly dance is also having a considerable positive impact. In our health, in the planet and in other beings with whom we share it. So, as far as we're concerned, the more plant-based meals consumed, the better. And if we can help make these meals easy AND delicious for you, we'll be happy.
COMPASSION
Most of us would say that we want to live in a way that doesn't negatively impact others. And we mean it, of course. It's easy when it comes to people/beings you can see around you, however, we are often too happy to feign ignorance when talking about those who are out of sight.
We don't always look at how our food is made, or our clothes, gadgets, household items, etc. Who made them, under what conditions, how did they come to us, what happiness or misery they may have caused along the way.
Often these hidden impacts of our choices are far greater than the places we can see and feel. If we want the world to evolve in the most positive way possible for everyone, we have to look beyond what's in front of us and ask questions about the bigger picture.
IT DOESN'T HAVE TO BE ALL OR NOTHING
Although we create foods that cater to a completely plant-based diet, that doesn't mean you have to be a vegan to enjoy our food. Even seemingly small changes in your diet can make a significant difference on our planet. In fact, a recent study suggested that if the US went vegetarian for just one day, it would save 100 billion gallons of water, 70 million gallons of gas, 3 million tons of soil erosion and $70 million in damage. resulting economic benefits. It doesn't have to be one extreme or the other. If you can't face diving into the deep end, try diving your toes first. You never know, you can learn to love him.

Every plant-based journey begins with education. You have a right to know the facts about how your food choices affect your own health, the planet and those you share. The work of some people has made this easier and easier in recent years, and we are certainly grateful for a better understanding of the truth.
